Hygiene and sanitation verification

Hygiene verification answers two separate questions and most programmes conflate them. Is the surface visually and chemically clean, meaning no soil or residue remains? And is it microbiologically acceptable, meaning what remains is below the limit you set?

Rapid methods answer the first during the visit. Laboratory counts answer the second in a few days. You need both, and you need them recorded against the same surface on the same date so they can be read together.

Product-contact surfaces after cleaning and before production, using swabs read for aerobic count and Enterobacteriaceae. Protein residue checks where soil carryover is the risk. Final rinse water from clean-in-place circuits, which is where a cleaning failure shows up first on liquid lines.

Where a surface repeatedly fails, the programme escalates it rather than simply logging it again. A point that fails three visits running is a design or method problem, not a cleaning-operative problem, and the report says so.

Auditors do not ask whether you clean. They ask how you know it worked, and they ask to see the evidence for a date they choose. A verification programme produces that evidence continuously rather than in a panic the week before.

Every result carries the sampling point, the date, the method reference and the limit applied, so the record answers the question without anyone having to reconstruct it.

The point of the programme is that you can answer for last Tuesday without preparing for the question.
