Raw meat carries its hazards in from the farm. The plant’s job is to stop the process amplifying them — and the laboratory’s job is to show, in numbers, whether that is working.

The pathogen problem is a process problem

Salmonella and Campylobacter-class organisms arrive with the live bird. They are a property of the incoming animal, not a failure of your plant — what the plant controls is whether scalding, evisceration and chilling reduce the load or spread it. Finished-product Salmonella detection, reported against the criteria in GSO 1016:2015, answers the release question for the batch in front of you. It says nothing about the batch behind it.

Indicator counts answer the other question. Trended by line and by shift, they show whether evisceration is holding, whether a chiller has become a cross-contamination point, whether a deep clean actually worked. A single count is a snapshot. The same count, plotted weekly against its own history, is the earliest warning your process gives you — and the cheapest one to act on.

A Salmonella ‘not detected’ describes the sample you sent. The indicator trend describes the line it came from.

Veterinary drug residues under GSO 2481

Antibiotics given to a live flock or herd become residues in muscle. The withdrawal period is your supplier’s discipline, but the residue is your product’s problem — and it surfaces at the worst point, after processing, packing and dispatch. GSO 2481 sets the maximum residue limits for veterinary drugs in food. Nexus reports each result against its limit, with the limit and its source named on the report, so the number arrives as a decision.

Residue testing earns its keep at goods-in, not at dispatch. Screening incoming raw material by supplier builds the evidence that either clears a source or catches it before a full production run is committed. Where a specific compound-and-species limit is in question, the laboratory confirms the applicable limit in writing before testing begins.

Freshness chemistry and the cold chain

TVBN rises as chilled meat ages. It is the chemistry of a complaint before the complaint — a rising figure across a storage trial or a distribution route tells you the cold chain is losing the argument days before odour does. Alongside it sits a plainer question: whether the temperatures on your records are real. A chiller display is only as honest as the sensor behind it.

Nexus calibrates temperature instruments under its SAAC-accredited calibration scope — chiller probes, data loggers, the thermometers your monitoring records rest on. The same discipline applies to samples. A swab or a rinse that warms in transit grows its own result, so samples travel within defined temperature bands and arrival temperature is recorded.

A frozen sample that arrives thawed is a different sample. Use ice packs rather than loose ice so meltwater cannot enter the container.

Label honesty as compositional verification

Species substitution and added water are compositional facts before they are fraud stories. Nexus frames label honesty the way its catalogue can defend it: measured fat, protein and moisture against what the label declares. A pumped fillet declares itself in its moisture and protein figures; a mince that is not what the box says drifts from the composition the recipe should produce. Declarations sit under GSO 9:2022, with nutrition declarations under GSO 2750:2024 — both are testable claims, not design choices.

Where a dispute needs speciation beyond what composition can show, the laboratory says so in writing rather than stretch a method past its scope.

Water, rinses and the sample journey

Slaughter and cutting run on water — scald tanks, immersion chillers, carcass rinses, wash-down of contact surfaces. Each is a route by which one contaminated carcass becomes many, and each is testable. Water and rinse samples scheduled against the plant’s own hygiene zoning, rather than taken ad hoc, turn ‘the water is probably fine’ into a record an auditor and a customer can both read.

The journey from floor to report is where results are won or lost. Sampling point, container, transit temperature, time to bench — every step is fixed in advance, and the report carries each result beside its limit and the limit’s source, whether that is GSO 1016:2015 for a microbiological criterion or GSO 2481 for a residue.
